Jean-Michel GUILLON,出於對葡萄酒的熱愛,1980年在Gevrey-Chambertin 村建立了自己的酒莊 。 在這裡,他師從當地酒農Rene Galland,從一片2.5公頃的葡萄園開始,逐漸發展到今天的13公頃土地。他的熱情和奉獻精神很快得到法國及世界傳媒的尊重和敬佩,他也被任命被為Gevrey-Chambertin 產區葡萄酒釀酒商聯盟主席。目前酒莊由 他與其子經營管理。
從無到今日,Guillon成長為令人印象深刻的擁有13公頃葡萄園的優秀酒莊。一系列的葡萄園,大多在(Gevrey-Chambertin): 特級園(Mazis-Chambertin)伏舊園(Clos de Vougeot);兩款Gevrey-Chambertin的一級園Champonnet和Petite Chapelle,前者更細膩,而後者則以結構見長。另外酒莊還有一款Gevrey-Chambertin的老藤佳釀,也非常值得推薦。
他得到法國葡萄酒專業雜誌的星級讚譽;自1990年以來酒莊每年均被法國最受歡迎“Hachette葡萄酒指南”選入。
Jean-Michel喜歡新法國橡木桶,並開玩笑說每年都是“最大的橡木桶消費者”、『我們追求的是高貴香醇,散發微微香草的成熟風味』。
布根地的前三大新橡木桶買家,分別是 Domaine Romanée-Conti 、 the Hospices de Beaune & Domaine Jean-Michel Guillon。
Burghound 『Guillon的酒相當現代化,摩登型態的布根地並仍保留清晰風格和優雅感,並帶有著厚實的黑皮諾口感。』被認為是布根地『新世界風格』的最佳代表。
Allen Meadows writes: “I would describe his wines as being amongst the best of the “new world” school of Burgundy, which is to say modern Burgundies that retain a clear sense of style and grace.”

Tasting note: Much more modulated wood and reduction make the nose difficult to assess today. By contrast there is both good vibrancy and freshness to the notably more refined medium weight flavors that also exude a subtle minerality on the super-saline, balanced and impressively long finish. This is also quite refreshing and while it would be infanticide to open one early, this just makes one feel like drinking it. Worth considering.

Tasting note: Here too there is moderate but not dominant wood setting off the more elegant and airy red and dark pinot aromas that exhibit background nuances of earth, floral and spice. There is a notably finer mouth feel to the even more mineral-inflected middle weight flavors that retain a lovely sense of delineation on the punchy, focused and well-balanced finale.
